I have a question. What if the data is continuously being written to the datastore entities while the export process is being initiated? Does it take all the data or a point in time data when the job was started?

It does not always take all the data which is continuously being written while the export process is running. After the job was started, the export process is separated by each entity and is proceeded asynchronously. So it takes a point in time data around when the job was started.
